Your next Cajun holiday feast is going to be smooth sailing with our classic recipe for fried turkey. Our handy Injectable Marinade and blend of Cajun spices bring all the flavor. Happy holidays, cher!

Ingredients

  • Louisiana Fish Fry Injectable Marinade
  • Louisiana Fish Fry Cajun Seasoning
  • 1 whole turkey, thawed
  • 3-4 gallons of peanut oil for frying

    PREPARATION

    Remove giblets and rinse turkey in warm water. Drain turkey well on paper towels. Inject turkey with Marinade according to directions on jar. Sprinkle the inside and outside of the turkey generously with Cajun Seasoning. Heat oil in fryer to 325° F. Fry turkey for 3 1/2 minutes per pound. Carefully remove turkey from pot and drain well. If you substitute a whole chicken instead of turkey, fry the chicken at 7 minutes per pound.

    PRO TIPS

    Fully Flavored Chicken

    For deeply flavored chicken, use a salt-and-buttermilk brine (preferred ratios vary). Soak for at least 8 hours and up to 24; rinse off the brine at the end. For a quicker brine, use 2 quarts of water with ½ cup each of salt and sugar – but don’t let it sit more than an hour or it will get very salty!

    Deep Fry

    Choose an oil with a high smoke point for deep-frying. Peanut oil is the iconic Southern choice. Vegetable oil can work, too. Add a bit of bacon drippings to pump up the flavor!
