Ingredients
- 1 package Louisiana Fish Fry Seasoned Chicken Fry (9 oz)
- 2 lbs boneless, skinless chicken breasts or thighs
- ½ cup cold water
- Vegetable oil, for frying
- 6–8 potato rolls or sandwich buns
- Mayonnaise
- Pickle slices
- Lettuce, shredded or leaf
- Cheese slices (optional)
Directions
- Prepare chicken: If using large chicken breasts, slice horizontally into thinner cutlets for more even cooking and easier sandwich assembly.
- Mix batter: In a bowl, combine 5 tbsp. Chicken Fry Mix with ½ cup cold water to make a batter.
- Coat chicken: Dip chicken into the batter, coating fully.
- Bread chicken: Press coated chicken into the remaining dry Chicken Fry Mix until completely covered.
- Fry: Heat oil to 350°F. Fry chicken in batches until golden brown and the internal temperature reaches 165°F. For best results, avoid overcrowding the pan and leave space between pieces while frying. Drain on a wire rack or on paper towels.
- Build sandwiches: Lightly toast buns if desired. Spread mayonnaise on buns. Layer with fried chicken, pickles, lettuce, and cheese if desired.
