This Louisiana recipe combines the rich flavors of hush puppies and crispy catfish for a savory, crowd-pleasing meal. Packed with Cajun seasoning, Southern charm, and a crispy, golden finish, it’s the perfect comfort food. Whether you’re hosting a feast or craving homemade Louisiana flavors, this dish will impress every time!

Ingredients

  • 4 bags of Louisiana Fish Fry Hushpuppy Batter Mix
  • 3 tsp. of Louisiana Fish Fry Products Cajun Seasoning, divided
  • 1 cup Louisiana Fish Fry Products Seasoned Fish Fry Seafood Breading Mix
  • 1 cup vegetable oil
  • Approx. 1 stick of butter
  • 3 cups half and half
  • 1 tube frozen sweet corn
  • 1/2 cup of pickled jalapeños
  • 1/4 cup green onions or chives, sliced
  • 2 cups cheddar cheese, shredded
  • 1/2 cup parsley, chopped fine
  • 4 medium-large catfish filets, sliced in strips
  • 1 Tbsp. paprika

For Sauce

  • 1 cup Louisiana Fish Fry Products Remoulade Sauce
  • 1/4 cup Louisiana Fish Fry Products Cocktail Sauce
  • 1/2 cup sweet pepper jelly
  • 4 medium potatoes
  • 1/3 cup dill pickle relish
  • black pepper, to taste

Directions

  1. Preheat the oven to 425°F. In a large bowl, combine Hush Puppy Mix, half and half, corn, jalapeños, green onions, cheese, parsley, 2 tsp. of Cajun Seasoning, and black pepper. Mix until well combined.
  2. Pour vegetable oil into a cast iron skillet and place it in the oven for 7-8 minutes. Once hot, remove from the oven, add butter to melt, then pour a small amount of the melted butter/oil mixture into the hush puppy mixture and stir. Pour the hush puppy mixture into the skillet.
  3. In a shallow bowl, pour Seasoned Fish Fry. Rinse catfish strips under cold water, shake off excess, and coat the fish strips thoroughly in the Seasoned Fish Fry. Sprinkle with paprika and remaining 1 tsp. Cajun Seasoning. Arrange the coated fish in a spiral pattern on top of the hush puppy mixture, leaving some cornbread peeking through. Place any remaining fish in the center in a single line. Bake for 15-20 minutes.
  4. While the dish bakes, mix sweet pepper jelly, Remoulade Sauce, Cocktail Sauce, pickle relish, and additional seasonings in a bowl. Refrigerate. 
  5. For the curly fries, use a spiralizer to cut the potatoes into strings. Heat oil and fry the potato strings in small batches, seasoning with salt and pepper to taste. Set aside.
  6. Once the hush puppies are done baking, remove from the oven. Using a silicone brush, gently paint the cornbread areas with the pepper jelly mixture (avoid painting the fish). Top with mounds of fried potato strings, slice into large chunks, and serve with a generous dollop of the pepper jelly mixture. Enjoy!
